Welsh Cakes


  1. 225g Self Raising Flour,
  2. 50g Butter,
  3. 50g Lard,
  4. 75g Caster Sugar,
  5. 50g Currants or Sultanas,
  6. 1/4 teaspoon Mixed Spice,
  7. 1 egg, Beaten,
  8. A little Milk ( about 1/4 beaker full-you won't need a lot),


  1. Sieve flour and spice into a mixing bowl,
  2. Cut Butter and Lard into small cubes and then rub into flour until mixture looks like breadcrumbs,
  3. Add Sugar and Currants. Stir,
  4. Add a little milk if needed,
  5. Using a round bladed knife, mix adding beaten egg a little at a time to make a soft dough,
  6. Rest the dough for about 3 minutes before rolling out,
  7. Roll out to a 7mm depth (not too thin),
  8. Cut into rounds with a round cutte(cups will do if you dont have one),
  9. Heat frying pan otr griddle to a medium heat,
  10. Brush lightly with oil,
  11. Try the pan for correct heat by experimenting cooking one cake,
  12. Cook for 1-2 minutes on each side until golden brown WATCH CAREFULLY(THEY BURN QUICKLY AND EASILY),
  13. Sprinkle lightly with caster sugar.
