Welsh Cakes
Ingredients
- 225g Self Raising Flour,
- 50g Butter,
- 50g Lard,
- 75g Caster Sugar,
- 50g Currants or Sultanas,
- 1/4 teaspoon Mixed Spice,
- 1 egg, Beaten,
- A little Milk ( about 1/4 beaker full-you won't need a lot),
Method
- Sieve flour and spice into a mixing bowl,
- Cut Butter and Lard into small cubes and then rub into flour until mixture looks like breadcrumbs,
- Add Sugar and Currants. Stir,
- Add a little milk if needed,
- Using a round bladed knife, mix adding beaten egg a little at a time to make a soft dough,
- Rest the dough for about 3 minutes before rolling out,
- Roll out to a 7mm depth (not too thin),
- Cut into rounds with a round cutte(cups will do if you dont have one),
- Heat frying pan otr griddle to a medium heat,
- Brush lightly with oil,
- Try the pan for correct heat by experimenting cooking one cake,
- Cook for 1-2 minutes on each side until golden brown WATCH CAREFULLY(THEY BURN QUICKLY AND EASILY),
- Sprinkle lightly with caster sugar.
